The healthiest breakfast my daughter always asks for

Banana pancakes, with just three ingredients. These were introduced to me by a good friend who makes them for her daughter, and they are delicious. I can’t tell you how many mornings my toddler (or my husband, actually) has asked for these.

There are two-ingredient banana pancakes out there, and they’re alright. But my friend’s secret was to add just a little bit of flour (she uses buckwheat flour, I actually use a packet of microwave oatmeal, but any kind of grain will work).

Ingredients:

1 banana

1 egg

1/8 to 1/4 cup whole grain flour. I say 1/8 cup (ish) because it depends on the size of the banana and the texture you like your pancakes. Start with 1/8 cup and add more if you need to! I’ve also used one packet of microwave oatmeal, prepared, if I’m out of flour.

Directions:

Mash banana. Whisk in egg. Cook oatmeal according to package directions and add. Mix. Fry like pancakes, in a little oil. Watch your little one gobble them up!

Note: these are not always PRETTY pancakes, but they are super, super tasty
