Easy, tasty broccoli salad
I saw this in a deli and since I’m recently obsessed with blue cheese, I really wanted to recreate it (plus who spends 9.99/lb on broccoli?!). I don’t know if it tastes like the deli salad, but I sure love it, and Cimorene even eats it. She used to just pick the cranberries out, but tonight she voluntarily ate the broccoli and asked for more (#forthewin)! Plus it’s SUPER EASY, and pretty darn healthy to boot. Here you go…
Ingredients
4 crowns of broccoli, chopped into somewhat bite size pieces
1/2 to 1 cup of mayonnaise (we’ve used regular mayo and avocado mayo)
½ red onion, finely sliced, or chopped, or whatever
1 cup dried cranberries
1 cup chopped nuts (cashews, walnuts, or pine nuts are my favorite)
6 ounces crumbled blue cheese
Directions
Step 1
Put the broccoli in a bowl and mix in the mayonnaise. Start with ½ cup and add more until it looks like the right amount of mayonnaise-y to you.
Step 2
Add in the onion, cranberries, and nuts. Stir.
Step 3
Add in the blue cheese crumbles and stir until just mixed.
Step 4
Enjoy!
