Spicy apple and sausage sauté

For those of you who like savory and sweet combinations (like me!) this is a super-easy and tasty dish to make. My daughter loves sausages and apples, so in our house it’s also a kid pleaser. If you don't like spicy, you can replace the spicy sausage with another kind. I’ll also sometimes make a double recipe and mix two kinds of sausage together, and that makes everyone happy (plus, LEFTOVERS!).

Ingredients

1 package cooked Andouille Chicken Sausage
3 green apples
1 yellow onion
Avocado/Olive/Grapeseed oil

Directions

Step 1
Peel and core the green apples and cut into slices (about 2-3mm thick, if you want to get specific). Peel the onion and cut into 1/2 inch wide wedges. Slice sausage into 1/4 or 1/2 thick slices.

Step 2
In a sauté pan, heat the oil over medium heat. Add sausage, and cook until golden on both sides (about 8 minutes). Add onion, and sauté for another 2-3 minutes. Add apple slices, and cook until the apple is just softened. Remove from heat and serve!

We eat this on its own (or with a side salad) since we’re doing less carbs, but for a more filling dish you can serve this over white rice or bowtie pasta. It's great comfort food!
