Healthy breakfast cookies your kids will eat

I wish I could take credit for these, but I can’t! My stepmother has been making these for years, and they’re just as good now as they were then. Applesauce and bananas instead of sugar, grated carrots to add some vitamins, spices to make them delicious!

Ingredients:

2 ripe bananas, mashed until smooth and creamy

1/3 cup nut butter

2/3 cup unsweetened applesauce

1 scoop vanilla protein powder (optional)

1 tsp vanilla extract

½ cup grated carrot (about 1 large carrot)

½ tsp cinnamon

¼ tsp nutmeg

¼ cup chopped nuts (optional)

¼ cup chopped chocolate chips (optional - I keep them in for me, but take them out for the kiddos)

1 ½ cups old fashioned rolled oats 

Directions:

Preheat the oven to 350. In a large bowl, mix mashed banana and nut butter until completely combined. Add applesauce, protein powder, and vanilla extract. Mix until completely combined. Add it oatmeal, nuts, chocolate chips, and carrot. Combine well.

Let rest for 10 minutes.

Drop cookie dough by spoonfuls onto a nonstick or parchment paper lined cookie sheet. Flatten cookies into circles. Bake for 20-30 minutes or until golden grown. Remove from oven and let sit for 5 minutes before moving to cooling rack.

Watch them disappear! I make a batch ahead of time and put them in the refrigerator so they keep longer.
